This easy Everything Bagel Chicken Tender Salad is easy to make, full of flavor and the perfect light dinner for spring. Chicken tenderloins are fried up with a crispy panko coating and everything bagel seasoning. Top off with a sweet honey mustard dressing.
After what feels like a long winter, spring is finally here! Comfort food is out. Lighter fare is in. We’re looking forward to gardens getting planted and flowers and trees coming to life, so spending time outside is on everyone’s agenda.
Having yard work to do is a perfect excuse to crack open a warm weather beer that’s typically called a “lawnmower beer.” Beers that you can enjoy while working out in the yard. Light, low ABV, and thirst-quenching — think pilsners, wheat, blondes and fruit ales.

Everything Bagel
Chicken Tender Salad
Makes 4 servings
Ingredients
½ pound chicken tenderloins
¼ cup panko breadcrumbs
¼ cup flour
4 Tbs everything bagel seasoning
3 Tbs olive oil
1 egg
1 Tbs water
¼ cup shredded cheddar cheese
Lettuce, cherry tomatoes, baby carrots, small cucumbers
½ cup honey mustard sauce
Instructions
On a plate combine the panko breadcrumbs, flour and everything bagel seasoning.
In a separate bowl crack the egg, add water and whisk together.
In a saute pan, add the olive oil and heat over medium heat.
Dip the chicken tenderloins into the egg on each side.
Next, dredge the chicken into the breadcrumb mixture.
Place the chicken into the pan and fry on one side for 4 to 5 minutes. Flip and cook for an additional 5 minutes.
*Because pans and stovetop temperature can vary, check the chicken for doneness before adding to salad. Center should no longer be pink and juices run clear.
Chop the lettuce, carrots and cucumbers.
Place the salad ingredients into a large serving bowl. Sprinkle with cheese; add the chicken to the top.
Serve with honey mustard dressing.
