4 tsp. olive oil

1 green pepper, sliced

1 red pepper, sliced

3 cloves garlic, crushed and diced

2 cups cooked fresh or frozen sweet corn

1 can black beans, drained and rinsed

5 slices fried and crumbled bacon (optional)

4 tsp. apple cider vinegar

3 tsp. white sugar

salt and pepper to taste



1. In a skillet, sauté peppers, onion and garlic in olive oil.

2. Add cooked corn, black beans, bacon, salt and pepper.

3. When the mixture is hot, add vinegar and sugar.
